Celery Root Cutlets

I know. Celeriac does not look appetizing from the outside looking in, but please! Don’t judge it by its cover and give this plant a chance. You will not be sorry.  It really require nothing more than some minor knife skill and creativity.
These cutlets are crispy on the outside and juicy, tender and incredibly tasty on the inside. Just delish!
They make nice, vegetarian meal.


Ingredients:
 
1 medium celery root (or Celeriac-depending on how cool the producer wants to sound),
2 medium eggs (beaten),
3/4 cup dried bread crumbs,
3/4 cup all purpose flour,
oil for frying,
salt and pepper to taste,
few slices of your favorite "yellow" cheese (optional),
2-3 cloves of garlic (minced),
few drops of fresh lemon juice.
 
Directions:

The process is very simple. Wash and slice away the outer skin of the celery root.
Using strong, sharp knife, cut 1/8-1/4 inch thick slices.
Blanch in boiling water for 20 minutes and drain in colander.
Allow to cool before proceeding with recipe.
You can place the slices in a bowl of water mixed with lemon juice (optional). This will prevent discoloration.
 
“Breading process”
To start the “breading process” you will need 3 shallow bowls or soup plates.
Mix the egg with salt and pepper in first bowl, have ready all purpose flour in second bowl and bread crumbs in third.
 
First dredge both sides of each slice into the flour.
Then lay each side in the egg mixture. Next, lay the slice in the bread crumbs.Top it with minced garlic and fold into yellow cheese (this is optional-see the pictures below). Repeat the step with egg and bread crumbs.
Prepare a frying pan with oil.
When the oil is hot, lay a few of the slices in the pan and fry on each side until golden brown.
Clean out the frying pan and renew with fresh oil if necessary. You do not want to burnt bread crumbs left in the pan from beginning of frying and have them on your last slices. They will not be tasty.
Drain on paper towel and serve hot immediately.
 
If you have some slices left, you can use them for burgers the next day, just keep them refridgerated in closed container. They really make a nice burger J
Enjoy it with a splash of fresh lemon juice, side of mashed potatoes and salad.
