Cauliflower soup (Zupa kalafiorowa)

This bowl of comfort makes a good lunch alone or with a sandwich. It is easy, hearty, and creamy. You can substitute turkey with vegetable stock and you’ve got a satisfying vegetarian meal!
Bonus? Kids love it.

Ingredients:

40 dkg. turkey wing (You can substitute meat with 1 Knorr vegetable bullion cube),
1 small cauliflower ( about 60g.),
1 small kohlrabi, washed, peeled and grated,
2 small carrots, washed, peeled and grated,
1/3 cup of fresh dill, chopped,
1/3 cup of fresh parley, chopped,
150 ml half & half cream,
2 egg yolks,
2 cups of water,
Salt to taste.

Directions:

Place a medium stock pot over medium high and add water and turkey wing (turkey wing must be well washed and cleaned).
Cover the pot and bring it to a boil, then reduce heat and let it simmer for about 30 minutes.
Grate washed and peeled kohlrabi and carrots.
Washed cauliflower cut into half and cut out the hard inner core (taking also all the green parts away). Chop it into medium florets. Place all the florets in a separate medium pot and cover with boiling water ( that should take care of all the uninvited guests ;))
After few minutes drain it well and add to the pot with turkey.
Add the rest of vegetables, stir once or twice and simmer for about 20 minutes.
Salt to taste.
Keep it on the oven for next five minutes, then take out the wing and separate the meat from the bone. Cut meat into small pieces and add back to the soup. Stir it around to combine…
Bring last time to a boil and turn off the oven. Yum :) This sure smells good!
Mix egg yolks with half& half and add the mixture to the soup. ( I run out of half&half this time end ended up adding just egg yolks and it was fine too. No panic :))
Serve hot, topped with fresh parsley or dill (optional).
