Ingredients:


Cream:


473 ml heavy whipping cream
2 tsp gelatin powder (dissolved in water)
½ cup confectioner’s sugar
1 tsp vanilla extract
3 tbsp shredded milk chocolate
2 tsp banana cream pudding (powder)
½ tsp salt


Cake Dough:


100g butter
½ cup confectioner’s sugar
1 ½ cup sour cream
1 tsp soda
1 tsp baking powder
5 tbsp cocoa
1 tsp vanilla extract
2 cups flour
5-6 medium bananas


Directions:


For the cake dough:


Preheat oven at 360°.
Melt the butter in a small saucepan. Pour it in a large bowl in which you will prepare the dough. Wait until it cools down.
Mix together all dry ingredients. Combine with butter and sour cream and mix well until all ingredients are completely blended together. Add vanilla and mix again.
Grease the cake tray on all edges for easy removal. Cover with flour. Pour the batter in the tray and bake for about 45 minutes. After that, insert a toothpick into the middle of the cake to see if it's done. If the dough does not stick to the toothpick that means your dough is ready to take out of the oven. Let it cool while you finish making the cream.


For the cream:


Pour cold whipped cream into the bowl. Add salt. Using a whisk (or mixer), begin whipping.
Disolve gelatin in two tsp of cold water. Wait for about five minutes and add additional 4 tsp of hot water (not boiling) Wait until it cools down. When the cream starts to thicken, just before soft peaks form, add gelatin. Continue to whip.
Combine slowly with sugar and banana cream powder. Adjust the sweetness to your own taste. Continue beating the mixture until soft peaks form. You can whip until the cream makes stiffer peaks if desired, but be very careful: You don’t want to turn the mixture to butter.
Once completed, begin to sprinkle some of the chocolate into the mixture. Gently mix it with a spoon.


Assembling the cake:


Using a spoon, carefully scoop out the center of the cake dough, but try not to reach the bottom. You want the bottom to stay at least 1 cm thick. Also keep about 2 cm distance from the outer edges of the cake. Place the scooped out dough in another bowl- you will be using this later.
Place the bananas on the bottom. Pour the cream over the bananas and use the spoon first and then your hands to carefully shape the cake in the form of a hill.
Gently sprinkle the remaining dough crumbs on top until you have covered the cream.
Carefully cover the cake in foil and place in the fridge for minimum three hours.
Your mole mound cake is ready!
