Crepes-with-Lemon-Curd-Cover

Ingredients:

2 cups of milk

2 medium eggs

2 cups of all purpose flour (about)

pinch of salt

vanilla sugar (optional)

Filling:

Lemon curd.

Directions of batter preparation:

In a medium bowl whisk together some milk, eggs. Add flour gradually, mix with salt and add some more milk (whip to a smooth batter).

Grease a pancake pan or frying pan with oil (few drops only).

When hot, pour in enough batter and cook on both sides until lightly browned. Continue until all the batter is used.

The number of pancakes will depend on the size of the pan. If you need more, increase the size of the ingredients proportionally.

Fill your crêpes, folding as desired. Pour some sifted powdered sugar on the very top. You can also serve them with whipped cream.
