Carrot/Orange Cookies (Ciastka Marchewkowo-Pomaranczowe)

Ingredients:

3/4 cup shortening
3/4 cup sugar
1 cup mashed, cooked carrots
1 egg
1 tsp. vanilla
2 cups flour (before sifting)
1/2 tsp. salt
2 tsp. baking powder
1/2 cup coconut

Directions:

Cook, peel and slice carrots. Put them in a pan and cover with water.
Boil for about 12 minutes (until they are soft).
Mash them and let completely cool down.
Preheat oven to 350 degrees.
Combine shortening, sugar and egg.
Mix until soft and fluffy.
Add vanilla and cooled carrots.
Once they are combined, add all the dry ingredients.
Using small spoon, place onto cookie sheet and bake for 12-15 minutes.
Place cookies on a cooling rack to cool.
Before they have cooled completely, frost them.

Frosting:

Grate the peel for some orange zest.
Juice the orange into a bowl.
Add the powdered sugar (about 2 cups) until it is the right consistency.
You want the consistency to be thick, not runny.
That orange goodness should stay on top of the cookies!
